Home Made – Gnocchi

Today’s motto is Home Made and we will cook gnocchi, little Italian potato dumplings. I never tried it before because it is so much easier to buy them in the supermarket, but if they are a success it will be something to show off! 😉

In my experience gnocchi is also one of the most mispronounced words in German. I heard versions from [gnɔʧiː] to [gnɔkiː] and before my Italian language course at Bielefeld University I have to admit I pronounced it [nɔkiː]. But when we now learn how to make them we can just as well learn how gnocchi is pronounced. –> [ŋɔki] !
But it’s funny: if you let the PONS online dictionary pronounce the word for you in Italian, German and English it’s different in every language. And the German pronunciation does not sound German at all! So maybe we are not even expected to pronounce it the Italian way 😉 If you want to check the pronunciations, click here!
I hope I don’t embarrass myself here with wrong vowels from the IPA, Dr Gramley would be very disappointed 😉

But let’s start with the recipe!

Ingredients Gnocci

This is what you need:

500 g potatos
1 egg
Flour
Salt

 

 

Boil the potatos until they are soft, peel and mash them. Add a bit of salt. Now knead the potato mash with your hands and add flour. But only enough flour so that the dough does not stick to your hands anymore. Then add the egg. Now knead the dough again.
The dough can now be wrapped in transparent film and put into the fridge for 30 minutes. Then you can form the dough into long, slim rolls and cut them into little pieces. The pieces are shaped into little balls. To get the typical gnocchi pattern, you press the little balls lightly to the prongs of a fork. Now  put them in boiling salt water for ca 8 minutes. Be careful that the water does not boil too much!

500 g Kartoffeln
1 Ei
Mehl
Salz

Als erstes koche die Kartoffeln bis sie weich sind. Dann werden sie gepellt, zerstampft und leicht gesalzen. Jetzt wird etwas Mehl untergeknetet, allerdings nur so viel, dass der Teig nicht mehr an den Händen klebt. Nun kommt das Ei dazu.

Der Teig muss nun in Klarsichtfolie gewickelt für 30 Minuten in den Kühlschrank. Danach kann er in lange, dünne Rollen geformt und in kleine Stücke geschnitten werden. Diese kleinen Stücke werden nun zu kleinen Kugeln geformt, die dann wiederum leicht an die Zinken einer Gabel gedrückt werden um das typische Gnocchi-Muster zu bekommen. Die Gnocchi werden nun ca. 8 Minuten in Salzwasser gekocht. Das Wasser darf nicht zu stark kochen, da die Gnocchi sonst zerfallen!

I serve the gnocchi with chicken breast and vegetables in cream sauce!

 

Here is the recipe for the sauce:Gnocci und Brot 006

Chicken breast
250 ml cream
1 pepper
1 packet of common mushrooms
1 onion
Spices
Flour

 

 

Cut the chicken breast into small pieces and fry them in a pan with olive oil until it starts to get brown. I get the meat at our butcher’s shop, where you can buy the chicken breast cut and seasoned. But you can also buy normal chicken breast from the supermarket. Then clean and slice the mushrooms, pepper and onion. Add the vegetables to the chicken and fry it, too. Then add the cream. Now let it boil for some time. You can season the sauce with pepper, salt, vegetable consommé, chilli and curry. Try what you like! The last step is to thicken the cream sauce. For that you take a cup, put water in it and stir in some flour. Now you can add the water-flour mix into the boiling cream sauce until it thickens.

Hähnchenbrust
250 ml Sahne
1 Paprikaschote
1 Paket Champignons
1 Zwiebel
Gewürze
Mehl

Schneide die Hähnchenbrust in kleine Stücke und brate sie in einer Pfanne mit Olivenöl an bis sie leicht braun werden. Ich kaufe immer Fleisch bei der Fleischerei unseres Vertrauens, die die Hähnchenbrust bereits geschnetzelt und gewürzt verkauft. Nun wasche und schneide die Champignons, Paprika und die Zwiebel und brate sie ebenfalls in der Pfanne an. Nun kommt die Sahne dazu. Lass das ganze etwas köcheln. Zum würzen die Sauce mit Salz, Pfeffer, Gemüsebrühe, Curry und Chilli abschmecken. Je nach deinem Geschmack! Zum andicken der Sauce, fülle etwas kaltes Wasser in eine Tasse und rühre etwas Mehl hinein. Nun gieße das Mehl-Wasser Gemisch in die köchelnde Soße bis sie dickflüssig wird!
